Marinated Chicken Salad

Hello, thank you for looking at my post! Today I want to share a healthy recipe with you all. It is a Marinated Chicken Salad.
6 small chicken breast halves, about 2 pounds
2 tablespoons margarine or butter
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 tablespoon toasted sesame seed
1 tablespoon lemon juice
1 clove crushed garlic
1 small head iceberg lettuce, shredded
2 medium tomatoes, chopped
2 green onions, sliced
2 cups sliced medium mushrooms
1 package Chinese frozen pea pods, thawed
Ingredients for Dressing 
1/2 cup vegetable oil
1/4 cup tarragon or wine vinegar
1 teaspoon salt
1 medium garlic clove, crushed
Pinch of ground pepper
Steps to Make Marinated Chicken Salad
1) Remove skin and bones from chicken. Cook chicken in margarine/butter and oil in skillet over medium heat, 6 minutes on each side. Cut into thin slices. Mix soy sauce, sesame seed, lemon juice and garlic; toss with chicken. Cover and refrigerate for at least 4 hours.
2) Mix lettuce and tomatoes; spoon into serving platter or plate. Arrange the chicken on top and sprinkle green onions, mushrooms, and pea pods around lettuce mixture. Serve with Classic French Dressing (instructions for dressing below)
Steps to Make Classic French Dressing
1) Shake all ingredients well, refrigerate in tightly covered container.

Cocktail Meatballs

Welcome to my blog! Today I will be sharing a recipe for Cocktail Meatballs. This is a great appetizer for parties or game time snacks.
1 pound ground beef
1/2 cup dry bread crumbs
1/3 cup finely chopped onion
1/4 cup milk
1 tablespoon snipped parsley
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
1 egg
1/4 cup shortening
1 12 ounce bottle chili sauce
1 10 ounce jar grape jelly
Steps for Making Cocktail Meatballs
1) Mix ground beef, bread crumbs, onion, milk, parsley, salt, Worcestershire sauce, pepper and egg; shape into 1 inch balls
2) Cook meatballs in shortening in skillet until brown. Remove meatballs from skillet and drain the fat. Heat the chili sauce and jelly in skillet, stirring constantly, until jelly is melted. Add meatballs; stir until coated. Simmer uncovered for 30 minutes, serve hot.

Chocolate Mint Dreams

Hello everyone, thank you for viewing my blog! Today I will be sharing a recipe with you for Chocolate Mint Dreams.
3/4 cup butter softened
1 cup confectioners' sugar
2 squares unsweetened chocolate, melted and cooled
1/4 teaspoon peppermint extract
1-1/2 cups all purpose flour
1 cup miniature semisweet chocolate chips
Ingredients for Icing
2 tablespoons butter, softened
1 cup confectioners' sugar
1 to 2 tablespoons milk
1/4 teaspoon peppermint extract
1 to 2 drops green food coloring
Ingredients for Drizzle
1/2 cup semisweet chocolate chips
1/2 teaspoon shortening
Steps for Making Chocolate Mint Dreams 
1) In a large mixing bowl, cream butter and confectioners' sugar. Beat in chocolate and mint extract. Gradually add flour. Stir in chocolate chips. (Dough will be soft)
2) Drop by tablespoonfuls 2 inches apart on ungreased baking sheets. Bake at 375 degrees for 6-8 minutes or until firm. Cool for 2 minutes before transferring to wire racks.
3) Combine icing ingredients and spread over cookies. In a microwave, melt drizzle ingredients and drizzle over cookies.

Rich Hot Fudge Sauce

Hello everyone! Thank you for checking out my blog! Today I will be sharing a Rich Hot Fudge Sauce recipe that I have tried and used many times.
1 cup heavy whipping cream
3/4 cup butter, cubed
1-1/3 cups packed brown sugar
1/3 cup sugar
Pinch of salt
1 cup baking cocoa
1/2 cup plus 2 tablespoons light corn syrup
2 squares unsweetened chocolate
3 teaspoons vanilla extract
1 to 2 teaspoons rum extract
Steps for Making Rich Hot Fudge Sauce
1) In a saucepan, combine cream and butter. cook and stir over medium-low heat until the butter is melted. Add the sugars and salt; cook and stir until the sugar is dissolved. This should take around 4 minutes. Stir in the cocoa and corn syrup; cook and stir for 3 minutes or until cocoa is blended.
2) Add chocolate; cook and stir 3-4 minutes or until melted. Reduce the heat to low. Simmer 12-16 minutes or until desired thickness is reached; stir continuously. Remove from heat and stir in extracts. Cool slightly and store in the refrigerator.

Pumpkin Spice Cake

Hello everyone! Hope you are having wonderful day! Today I will be sharing a recipe for a Pumpkin Spice Cake. This recipe is so good, serving it cold or hot is going to be an amazing treat for you and your family!
1/4 cup butter, softened
1/2 cup packed brown sugar
2 tablespoons sugar
1-1/2 teaspoons grated orange peel
3 egg whites
1 cup canned pumpkin
1/4 cup light corn syrup
2 tablespoons molasses
1-1/4 cups cake flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
Whipped cream, optional
Steps for Making Pumpkin Spice Cake
1) In a large mixing bowl, cream the butter, sugars, and orange peel. Add egg whites, one at a time, beating well after each new egg white. Beat in the pumpkin, corn syrup, and molasses until blended. Combine flour, baking soda, baking powder, cinnamon, ginger and salt; add to pumpkin mixture, beating on low speed until moistened.
2) Pour into a greased 8 inch baking dish. Bake at 350 degrees for 30-35 minutes or until a toothpick comes out clean. Cool on a wire rack. Whipped cream is an optional topping.

Apple Crisp

Hello everyone! Thank you for looking at my blog today! I will be sharing a recipe for a delicious Apple Crisp.
4 medium, tart apples (golden delicious work best)
2/3 to 3/4 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup oats (quick cooking or old fashioned)
1/3 cup stick margarine or butter (softened)
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
Steps for Making Apple Crisp
1) Heat oven to 375 degrees. Grease bottom and sides of square pan with butter or margarine.
2) Arrange the apples in the pan. Mix the remaining ingredients and sprinkle over the apples.
3) Bake around 30 minutes or until the top is golden brown and apples are tender.
Serving Suggestion: Vanilla Ice Cream is a great topping on your Apple Crisp
